Lemon Caper Chicken-You on a Diet
Serves: 2 Main Dish-Chicken
2 skinless, boneless chicken breasts
Juice of 1 lemon
1 tablespoon olive oil
2 shallots minced
1 tablespoon capers drained
1 teaspoon Dijon style mustard
Place chicken in a shallow roasting pan. Combine remaining ingredients in a bowl and pour over chicken. Broil 6 inches from heat source 12-15 minutes or until chicken is cooked through.
