6 c. romaine lettuce, chopped
2 c. barbeque chicken, cubed
1 c. cooked black beans
1 c. canned corn
2 tomatoes, chopped
1 cucumber, sliced and quartered
1 avocado, chopped
1/2 c. Monterey Jack cheese
ranch dressing
combine and toss ingredients.
We ate this over cooked wheat tortillas that we bought from Bajio's. It was super yummy. The only change I would make is getting some of the specialty dressing from Bajio or Cafe Rio. Don't know if that would be low cal./low fat....
